It is a comic book universe, there is no such thing as death. Being dead to them is like us calling in sick, you call in dead, rest up for a year, then you come back to the field so that the next character can "die."
Anyway, it's not like these are the comics. There are so many villains in the comics that killing off them in the movies allows them to just move to another villain that hasn't been seen yet. It sucks, but sometimes that is the best way to go. At least, for heroes that don't mind killing. I still don't like that Penguin and Joker were killed off in the Burton movies. Iron Man didn't kill Trevor or Hammer and he didn't intentionally killed Obediah. Winter Soldier didn't die. Loki didn't die.
Now the thing about Thanos is even if he dies, he will be back since he is practically immortal.
