I gotta go with a resounding NO on Peter Jackson, though I'd like to see what Weta Workshop could do with a Godzilla movie.
No on Guillermo Del Toro as well; I don't want to see a Godzilla with no eyes in it's face because now there are twelve splayed out in a pattern reminiscent of a peacocks plumage on the back of its legs. I fear that this is what will happen to Smaug in the Hobbit movie.
Alfonso Cuaron might be a great choice as he has has a keen eye for outside settings and scenes and can bring the emotion.
If Tarantino did want to make a giant monster movie my guess would be that he would want to use his own monster creation rather than an established character. In an interview I heard him do yesterday on the Howard Stern show he said that when he was working at the video store before he "made it" he used to think about making super hero movies with the popular characters we are familiar with, but now that he himself is established he thinks it would be more interesting to use super hero characters of his own creation than use say Spider-Man or Iron-Man.
