Both Mononoke and Kiki have dubtitles on the new Disney Blu-Rays. The Wind Rises has accurate subs.
If you want more accuracy in your subs then buy another Region A release, like the Hong Kong or Japanese releases. If you're not as much of a stickler then the Disney release is fine. The dubs for those films simplify things a bit, try to make some things clearer, and add the occasional joke, but they're still
fairly accurate to the spirit of what's being said. People who've never seen the films before probably won't care whether the character is called the Deer God (Japanese) or Forrest Spirit (U.S. dub). The reason why the dubtitles were so egregious for Castle in the Sky (Disney's previous offender) is because the dub was off the mark a lot!
Disney have also announced the release of Porco Rosso, Earthsea, and Pom Poko (Yay! My favorite non-Miyazaki Ghibli film!) for early next year. Naturally, I'll be waiting for the early reviews before buying!
The Kingdom of Dreams and Madness, the doc filmed during the making of Wind Rises and Kaguya, will be released on DVD in January:
