It's been a long while but if I recall, you change the language setting on the DVD player to Japanese. The when you play the DVD, you select English subtitles. I have the instructions printed in my copy and will update it with the actual steps. Bottom line is it can be done but it involves changing setting on the player.

Update: I found this method on DVDCompare but can't comment on effectiveness.

The Japanese audio track has forced "(Simplified) Chinese" subtitles. However, there might be some tricks to get the English-subtitles selected, with the Japanese audio. You may try this (which may and may not work on your player - Buy at your own risk):
-Put the disc in your player.
-Optional: When the red copyright-screen shows up, push the "Stop" button once, and then the "Menu" button on your remote.
-When you´re in the "Menu"-screen, select "Language & Subtitles".
-Select "Cantonese", and then the screen should switch into the subtitle selection.
-Select "English", and on your remote control push the "Audio" button twice. It should switch from "Audio [1 Mono]" to "Audio [1 2CH]".
-Select "Resume" and you´re done.

i'm not well versed in dvd burning & such, but seeing as i just got a new laptop that actually has a dvd burner, i might have to try that.
