The anime magazine Anime Insider had a one page deal every month about this sort of thing.
Basically "What if" the show was anime.
It included (IIRC):
Dr. Who
Scooby Doo
Harry Potter
X-Files

Percy Jackson would be great in animated form. The books already have an impressive balance of humor and darker themes, set in a rich mythological environment. In the hands of a studio like Trigger or Bones, I'm sure it would be terrific.
Artemis Fowl might make a good show as well.

Usagi Yojimbo, naturally. It's set in feudal Japan, it riffs on Japanese stories and themes. The funny thing is that it's never been published in Japan! It does have Japanese fans, but they have to read it in English (or in the myriad non-Japanese foreign translations). It could make a fantastic TV series (or movies, for that matter).

I remember Descent, never owned a copy but for a long while you could count on it or solitaire up and running on the display computers at stores so I got to play bits and pieces of the game.

"Knight Rider", K.I.T.T. could transform at one point into a robot.

Wow! That's incredible!
After seeing who knows how many anime that borrowed from Star Wars visual aesthetic (particularly from the late 70s to the mid to late 80s) there's just something so very right to see Star Wars proper presented this way.
