I saw one for manga, but not anime, so I figured why not? What anime are your favorites? It does not have to be just titles, but genres, characters, mecha, mascots, merchandise, staff, and the likes! I'll start off this topic with all the anime I haven given a 10/10 over the years (fav to least fav):

Real shame anime these days rarely use monsters of the week. There are plenty of regular anime monsters, so I'll list my favorites of those too! (this is a giant monster board after all).

There are plenty of others that i would say are very good (like Paprika, Grave of the Fireflies or Jin Roh) but i wouldnt necessarily put them in a favorites list

Still only new here, so don't smack me too hard - yet.

Here it goes;

Neon Genesis Evangelion : stupid ending I know, but it works with the whole warped series. Still a favourite sound track as well.
Claymore :They screwed up the ending (didn't follow the manga) but I do like the Yokai and the kick-ass "silver eyed witches" .. especially Clare.
Cowboy BeeBop : TANK will always be great.
Angelic Layer : CLAMP at it's finest, and what can I say, I like the fight sequences.
Amazing3 aka Wonder3 aka W3 : pure B&W gold from the 60's - along with Gigantor / Prince Planet and GoldenBat.
Hyper Police : That 9 tail fox is a hoot.
Girl Und Panzer : Tanks and school girls - YUP IM IN.
Kids On The Slope : Excellent jazz.
Sound! Euphonium :
High School of The Dead : A bit silly plot wise, but hey this is anime we are talking about.
GITS-SAC :
Azumanga Diaoh: Slice of life anime - if you don't like those anime stay away from this.
Detective Academy Q :
The Meloncholy of Suzumiya Haruhi : Quirky and not for everyone.
FLCL : Quirky and not for everyone.
Freezing : If you don't like fanservice stay away from this one.
Voltes Five: Let's VOLTE IN ! .. aka I hope they find their Father soon.
Your Lie in April : I do seem to like the music based ones.

Golden Boy : This one is a must to watch dubbed, it is just funnier.
Devilman Lady : Remember this being quite brutal.

Not an easy one, I've got almost 50 years worth of anime memories going back to before I knew what anime was. Some of these are franchises that I won't bother going into the different flavors. (Gundam, Tenchi Muyo etc.)
