Why not, I'll take a stab at this. I could never make a concrete list, but these are my choices for the moment:
Godzilla
Angilas
MechaGodzilla
SpaceGodzilla
Guiron
Daimajin
Battra
Gigan
Destoroyah
King Ghidorah (Showa)
My runners-up would probably be Orga and Rodan. Maybe my list errs on the side of grimdark, but so be it.

Like Bruticus, there's no way I could make a definitive list, but these are the ones standing out to me right now (in no particular order):

King Ghidorah (Showa)
Mothra (Showa)
Mechagodzilla (Showa)
Daimajin
Frankenstein/Sanda/Gaira (a dead heat for me)
Angilas
Rodan (Showa)
Gamera
Abominable Snowman (from Half Human--they don't have to be giant, do they?)
EDIT: Very honorable mention for Titanosaurus. He's popping up in others' lists, and I'd forgotten just how much I liked him.
